May I please have olive dressing recipes for Muffaletta sandwhiches? - muffaletta olive salad

Here is a simple

Olive Salad
(Yesterday)

3 cloves garlic, crushed
1 cup chopped pimento-stuffed green olives
1 cup pitted and chopped black-ripe "olives or Kalamata
1 / 2 cup roasted red pepper sliced
1 cup olive oil
3 tablespoons chopped parsley
2 tablespoons white wine vinegar

Combine all salad ingredients and let stand overnight. It does not need to be chilled for the first night.

Olive Salad:
Cored 2 / 3 cup, coarsely chopped green olives
Cored 2 / 3 cup, coarsely chopped Kalamata olives
1 / 2 cup chopped
3 garlic cloves, finely chopped
1 anchovy fillet, mashed
1 tablespoon capers, drained and rinsed
1 / 2 cup finely chopped fresh parsley
1 teaspoon fresh oregano, finely chopped coriander leaves
1 / 2 teaspoon freshly ground pepper
1 / 2 cup extra virgin olive oil

In a medium bowl, combine all ingredients and let flavors blendat least 1 hour before serving. Store, covered, in refrigerator until use.
